The Federalist Chardonnay is a full-bodied and packed with aromas and flavours of green fruits such as apple, pear and melon and also citrus fruits of lemon, lime and grapefruit. The allowance of malolactic fermentation after the primary fermentation creates the classic notes of butter, vanilla and cream. The wine’s lees are stirred through the malolactic fermentation process, and the wine is aged on its lees until blending, adding further complexity, body and depth to the flavour profile. In terms of the wine’s ageing, 35% of the new oak is American and Hungarian oak, with a little bit of French. The Hungarian oak mimics French with a spicy character and the American rounds it out with a sweeter finish.
The Federalist Chardonnay comes from the region of Mendocino County, along the North Coast of California.
