Pivnica Cajkov, Vulcanica #4 Pet Nat is ripe with peach and apricot notes. There is even a hint of raspberry and salinity with some banging acidity. Tastes best shared with friends in the park or at home. Pet-Nats are the kind of wine to be drunk any time of day, with any meal! They are super versatile and can stand up to a multitude of foods, but we prefer to have it as an aperitif or with our favorite cheeseboard selection.
Pivnica Cajkov, Vulcanica #4 Pet Nat is a Pet-Nat wine of Pesecká Leánka (Feteasca Regala), this vintage was blended with the still wine of Pinot Gris, (6 weeks on skins) and fresh must of vintage 2019, this was added to start the secondary fermentation in bottles. These lovely méthod non-traditional bubbles, as winemakers call it are full of life and joy. Wine is vegan.
Marek Uhnák of Pivnica Čajkov has seen it all. He studied viticulture, where they taught him all about chemistry, preservatives and all cool new industry stuff. After years of conventional wine production, he understood that if he wants to let the terroir fully express, the only way is the low intervention, the natural winemaking path. His vineyards are patches located in the forest where no ploughing of soil giving birth to beautiful meadows. The synergy of land, animals and plants is palpable.
