The Pivnica Brhlovce Bonka Pet Nat is produced by winemaker; Jan Zaborsky. Jan is the man behind the Pivnica Brhlovce winery which lies a in village of Brhlovce – a UNESCO heritage site with dwellings dug into volcanic tuffs. The whole terroir is set on rolling hills with shallow soils and bed rock of compressed volcanic ashes. Jan, is a winemaker and farmer, who is keeping in touch with the vineyards, fields and animals throughout the whole year. His micro production of 8,000 bottles makes his wines scarce.
This Pet Nat is a field blend of a 40 year old very small (0,4ha) vineyard. All grapes of all varieties are harvested and processed together. Skin contact is 24 hrs – and spontaneous fermentation is in stainless steel tanks. After two months, when fermentation is finished, fresh juice of the Blaufränkish has been added and the wine is bottled and let for secondary fermentation. Each of the bottles has a handmade painting on it – each bottle is original. The Colour of the wine is similar to that of blood oranges and grapefruits. There is a wonderful citrusy & ripe peach note in the aroma, with a citrus acidity and hints of forest strawberries on the palate. It’s a fruit Bomb!!
