Part of The Character Series, The Wirewalker Pinot Noir is a garnet red in colour as well as being perfumed and fragrant on the nose. This Philip Shaw cool climate Pinot displays earthy notes whilst retaining the prettiness and feminine characters that Pinot should exude – its vibrancy comes from its generosity of ripe berries, notably cherries and strawberries. this fruit is well balanced and complimented by the savoury spice that comes in the overtones. The palate is generous offering sumptuous. fruit framed by elegant supple tannins. Pinot Noir is still a relatively new variety for the Orange region, but it is showing excellent promise in this cool, mountainous and continental climate.
The Wirewalker is made entirely with older oak to allow the fresh red cherry characteristic to shine, whilst adding a little bit of earthy spice ton the back palate. This gives the wine character and complexity. The grapes are harvested in the cool climate of the morning, which shortly after about 15% of selected parcels are kept to ferment. The remainder of the grapes were de-stemmed, sorted and placed in closed fermenters. Wild yeast carried out the primary ferment which were monitored and tasted daily. The juice was subject to an extended maceration for greater depth. The wine was then racked on oak for ageing.
