The Aime Chais Rouge is a glorious wine, a blend of 70% Merlot, 20% Cabernet Sauvignon and 10% Malbec from the Cotes de Duras – more specifically it is located in Lot-et-Garonne, in the area of the Entre-Deux-Mers plateau. Without prior knowledge of viticulture, Catherine and Jean-Mary Le Bihan created their own domain by taking over small farms after the retirement of the former owners. The year of 2000 is that of their first year of wines. The family also breed horses on the estate, they also have a BnB, but the winery is their day to day job and their main focus. The use of chemicals in the vineyard is banned and they favour attentive care according to the vigorous biodynamic calendar to obtain a perfectly natural grape. Agriculture has long taken precedence over viticulture, but Catherine and Jean-Mary Le Bihan have taken the step in the other direction. Their wines are original and sincere, from the Bordeaux grape varieties, these wines are quickly becoming the best in the region.
The Aime Chais Rouge on the nose is a fruity wine that’s tender and fresh with a minty touch. Deep garnet colour with evolving on scents of the undergrowth of pine, it makes us travel in the south of France. On the palate, this is a deliciously crunchy wine, with a fleshy attack, it develops a beautiful structure. A true wine of pleasure, with polished tannins, which will suit all circumstances. The wine matches perfectly with Spring lamb with potatoes.
