This Mais ou est Ornicar Minervois is made from 70% Grenache, 20% Syrah and 10% Cinsault in the Minervois AOC, down south in the Languedoc-Roussillon region, which produces a host of surprisingly good wines. Jean-Baptiste Sénat and his wife Charlotte have been working this fifteen-hectare Domaine in the heart of Minervois since 1996. They are located in Trausse Minervois in the foothills of the Montagne Noir. The soils here are limestone-clay and their mainly south-facing vineyards are set in the heart of the Garrigue. The vineyard is certified organic and all work is carried out all work by hand. No chemicals are used throughout the whole process. Jean-Baptiste follows a certain laissez-faire method in his winemaking, to arrive purely natural product.
