The Pet Nat Sparkling Rosé from the Kamara Estate is the story of Kioutsoukis family (Dimitrios, Eleftheria and their children). Dimitrios Kioutsoukis with his family assistance and inspiration planted 11 hectares of vines in northern Greece near Thessaloniki, an area well known from ancient times for its wines. Dimitrios (a chemical engineer – UC Davis winemaking) and his daughter Stavroula ( an agronomist – oenologist) carrying on the family tradition and passionate about permaculture principles use more than organic methods in viticulture and winemaking. Their main goal is to give birth to wines versatile, unique that express both their philosophy and the terroir. Seeking the real taste of the life they created the Kamara pure wines, low intervention wines (natural wines).
After halting primary fermentation, they brought the wine down to a very cool temperature and let it settle off of its primary lees. The next year they add the fermented must of Xinomavro to the wine, which in the bottle provides the sparkle and lees-y feel as it gets turned into alcohol and CO2, and not disgorging makes it hazy, creating broader palate weight, pleasing textures, and balance throughout. This special bottling is done entirely by hand.
The Pet Nat Sparkling Rosé is unsurprisingly lively and brisk with fresh citrus, red fruit, and the snap of cool watermelon to the nose. On the palate the flavours of strawberry and yeast are predominant. The crown cap holds in the fizz. This special wine should be opened and enjoyed cold. The wine pairing here is easy: anything and everything… or nothing but good times.
