From Sunday Carbonic Pinot Gris 2017
From Sunday is quite the fun project dreamt up by three university friends. Sam, a viticulturist, James, a winemaker, and brand guru, Dave. They may all be busy with their own day jobs, but From Sunday is their own project, indulging in producing the sort of wines that they love to drink, making the most of unusual parcels of fruit and wacky winemaking techniques. Thanks to Sam’s work as a viticulturist, they benefit from access to special blocks and vineyards. All sites are farmed organically with great dedication, and the same attention continues in the cellar.
Sourced from one organically farmed vineyard in Orange, NSW on the ancient volcanic soils of Mount Canobolas at 950m elevation. The fruit was hand harvested and chucked into a fermenter as whole bunches, where it was sealed up to undergo carbonic maceration. After 7 days, where the alcohol level was reaching 2% ABV, the fruit was basket pressed to stainless to undergo a further 2-3 weeks of primary fermentation. Unfined, unfiltered and 75ppm only at bottling.
From Sunday Carbonic Pinot Gris is a brilliant copper colour and a whole other level in lifted aromatics. Combining the best of both worlds with white and red fruit characters. The closest thing we can relate it to is the most delicious apple and blackcurrant juice you have ever had. From Sunday always serve it chilled and it’s their go-to summer afternoon wine. Lighter, fresher, made to enhance food not compete with it.
The 2016 “carbonic” sold out in record time so they decided to make another vintage in 2017 and here it is, ready to be snapped up sharpish!
