Foxhole Spirits specialises in the creation and production of high quality, premium spirits with a focus on using otherwise unused resources, promoting sustainability and creativity within the drinks industry. They distil their knowledge and expertise to create handcrafted products that are beautifully unique, of the highest quality, honest to their origins and most importantly, exceptionally delicious. Foxhole launched their first batch of Foxhole Gin in September 2016; each new batch is beautifully balanced, smooth and aromatic, with its own subtly distinctive character bestowed by that year’s grape harvest. In March 2018, we launched HYKE; created using grape spirit produced from internationally sourced, fresh table grapes that are surplus to the requirements of the supply chain. Made in England, HYKE is flavoured with a blend of botanicals inspired by the grapes’ African and South American origins, including coriander, myrrh and rooibos.
After pressing by the winery, English grapes are reduced to a pulpy mass of skins, flesh and pips. Known by its French name, marc, it’s a waste product; and every year, the industry produces tonnes of the stuff. Unfortunately, it usually ends up on the compost pile, along with around a third of each harvest’s precious juice: an inglorious fate for a resource so rare and valuable. It just didn’t seem right. Foxhole recovers marc from vineyards throughout England and sends it back for a second pressing. All that exquisite formerly lost juice is lovingly collected, fermented and made into an English Wine. Not that you’ll ever get to drink it: every drop is shipped to the distillery, where it takes its place at the heart of Foxhole Gin.
What was once simply discarded is reclaimed and repurposed through craft, skill and resourcefulness. Why just make a great cocktail, when you can also make a real difference?
