Frédéric was urged to find a continuation of this philosophy and the process of winemaking. So she chose to mature in oak barrels and terracotta pots, which have a neutral flavour. Terracotta allows Frédéric to produce a “digestible” organic wine that respects the purity of the fruit and the nature of the soil.
