In Caux, in the Languedoc, the Font des Ormes, a blend of Grenache 50% – Syrah 30% – Carignan 20% is undergoing a metamorphosis in an immutable setting, a valley bordered by two basalt flows. Ambition: to reflect in the wine the elegant and serene energy of the landscape.
The soils of Font des Ormes, with their rare mixture of limestone and basalt, form the basis of the style of the estate’s wines. Especially since the two marry very well. The basalt confers generosity and elegance, the limestone bringing depth, freshness and a more strict side. Over the years, thanks to the work accomplished in order to restore the life of the soil, these characteristics are becoming more pronounced. And the transition to biodynamic culture now allows reinforcing this evolution. The wines bear witness to a real harmony between the fleshy basalt and the depth of the limestone.
2015 Font des Ormes has a rich and candied nose with notes of red fruit mixed with aromas of limestone, it has an elegant and generous palate which is supported by notes of pepper (but soft tannins), graphite, chocolate. This stunning wine expresses all the freshness of the limestone and the concentration of Basalt. A wine with finesse which nevertheless retains the delicacy of Languedoc wines. The perfect pairing for grilled red meats, and nice roast beef.
Certified organic and biodynamic cultivation method in the process of certification. Organic compost, green manure, tillage, manual harvest. Low natural yield (20 hl/ha). Harvested in 12 kg crates and vinification by plot, without crushing. Light extraction mainly by punching down. Ageing in concrete vats.
