Domaine Binet-Jacquet was Founded in Faugères in 1999, Binet-Jacquet produced their ﬁrst commercial vintage in 2005. They make wonderful wines from low-yielding bush vines planted in the rocky slate soils that are typical of the region. Viticulture here is certiﬁed biodynamic and yields are around 30 hectolitres even at the entry point of the range. Vines are trained to a free-standing ‘gobelet’, no sulphites are used and the wines show remarkable freshness and purity of fruit alongside a long mineral ﬁnish. Incredible, juicy and vibrant natural wines.”
This is certified biodynamic with no sulphite fermentation. All 17 plots are vinified separately at the winery before blending. The tradition is fermented in tank and sees no oak ageing. Olivier Binet has a long and varied history in the industry as a sommelier, wine writer and winemaker across multiple vintages and regions. He and Pierre Jacquet set up the winery in 1999 and planted pretty much all the vineyards themselves from scratch in the ‘old’ way. This means at a higher density, with quality rootstocks and in the best sites that had not been denuded by systematic sprays. They are located in the higher altitude part of Faugeres where the vines have to dig deep in the bare schist rock to find water and nutrients, resulting in high quality, naturally low-yielding.
This wine is a very easy wine to drink, tonnes of forest fruits, a medium – dry palate.
