Costadila Rosso 2016
The Costadila Rosso from Ernesto Cattel is a small, traditional, organic, “closed-loop” farm in the hills north of Venice. Costadila is set in the hills north of Venice, where “Prosecco di Conegliano e Valdobbiadene” is historically produced. According to the local tradition, his wines are fermented in the bottle. They’re not filtering and not adding sulphites, they give their wild-yeasts the ideal condition to do their job. Honest and daily sparkling wines are what they do very well! Not only was Ernesto’s cause worthy but it also produces wines of exceptional purity, depth and drinkability. The wines are made by parcel and labelled according to the altitude. Ernesto will sometimes do a short skin maceration depending on the parcel and quality of the vintage and after the first fermentation, the wines are bottled with the addition of sweet must from the same vintage to start the second fermentation.
On the nose the Costadila Rosso is intense, it reveals notes of violet, black cherry and plum, combined with hints of aromatic tobacco, cardamom, liquorice and cocoa. The palate is balanced, full-bodied and with a well-developed tannin. Wide and long the finish. This is a bottle to enjoy at the table, in the company of friends.
