The Costadilà Col Fondo 280 SLM | Costadila is a small, traditional, organic, “closed-loop” farm in the hills north of Venice. In accordance with the local tradition, their wines are only fermented in the bottle, using wild-yeasts and never adding sulphites. They aim to produce honest, easy-drinking sparkling wines. This sparkling orange wine; 280 slm Costadilà is not a simple aperitif wine, but a wine that recovers the origins of its own terroir and can be paired with any meal with great satisfaction.
An orange sparkling wine, obtained by maceration for 15 days, with great character and thickness. Through the use of native yeasts, the cellar Costadilà has succeeded in the ambitious aim to rediscover the identity and characteristics of terroir from which comes the sparkling and generous wine that accompanied meals of people of this area a few decades ago. The biodynamic philosophy can be summed up in this simple mission, creating your own wine following the dictates of those who came before us, safeguarding the craftsmanship of wine from all modern industrial logic. A successful challenge, judging by the quality of this bottle.
The Costadilà Col Fondo 280 SLM is an opaque yellow-orange from the long maceration on the skins and the presence of the yeasts. There is an Intense scent of ripe yellow fruits and white flowers with a mineral background. This wine is smooth, fresh and crunchy, with an elegant minerality and a pleasant bitterish length.
Original and curious yet simply great.
