Pannonhalmi Sauvignon Blanc is a quality dry white wine with its own PDO. It is a 100% Sauvignon Blanc varietal which is fresh with both the aroma and the palate of delicate tropical fruits. This comes through in the form of passionfruit as well as portraying hints of pineapple. It has a crisp, refreshing palate and a scented, aromatic length. In all, it is a delicate wine, refreshing, light and delicate. For the food pairing with this wine, it goes excellently with dishes that contain asparagus, vegetable garnishes and fresh or salt water fish.
Made in the Széldomb and Tavaszó vineyards of soils of sand and white clay, the grapes are grown on west and south west slopes which keep it jsut out of the sun to help slowely develop the exotic fruit flavours and sugar content ready for the wine making process to commence. Directly after hand harvesting the grapes, they were sent to winery, where grapes were de-stemmed and crushed. Following that the grapes were left for a gravitational pressing on their own weight and left with skin contact for 14 hours. This was done at a very low temperature of 7°C. After being softly pressed, the cleared juice was mainly fermented in stainless steel tanks, partly on the skin. The wine was kept on the fine lees for two months. Served between 10 and 12 degrees.
The crop of the two vineyards Széldomb and Tavaszó that bear diverse soil and microclimatic characteristic was harvested in different phase of biological ripeness. Due to the timely and carefully applied technology in the winery, a tasty and crispy white wine with the typical notes of the grape variety was produced that, at the same time, authentically represents the natural conditions of Pannonhalmi. Boasting over 50 Hectares, Archabbey claims the title of the oldest winery in Hungary.
